My favourite gluten free Victoria Sponge Cake recipe!

Welcome to Yummy Bakes Gluten Free blog, today, I’m so excited to share with you my go-to gluten-free cake recipe that has become a staple in my kitchen. This cake is not only delicious but also incredibly light and fluffy, making it a crowd-pleaser every time. The recipe is Becky Excell’s, one of my favourite gluten free gurus as her recipes are delicious and easy to follow!



Why I love this recipe


Gluten free cake baking can be a challenge, with the cake not always tasting right, or having a weird texture, but this recipe will forever positively change your gluten free cake baking. When I first made this cake, I remember being amazed that it was gluten free, because it was amazingly light and fluffy, the top of the cake had the right level of crunch and the cake had risen a normal amount! Fast forward to now, I make this cake at least three times a month for family and friends, and most of the time it is eaten in less than 24 hours!

 

I love the simplicity of the recipe – I just put everything in the blender and turn it on until the cake mix is smooth and everything is mixed in. This is great as it makes the process really quick and limits the mess I make in the kitchen. The cake also doesn’t take that long to bake, only around 25-30 minutes, meaning I can clean up the kitchen, do the washing up, and get baking trays out, all before the cake is out of the oven.

 



I use this recipe to make gluten free Victoria Sponge cakes, but also for gluten free celebration cakes and gluten free cupcakes. Just add some butter cream or your own preference of gluten free icing and some gluten free sprinkles and you’ll have a beautiful and delicious celebratory treat!

Ingredients:

 

225 g gluten free self-raising flour – I always use Doves Farm gluten free self-raising flour

1 tsp baking powder (make sure that it is gluten free!) – I always use Doves Farm gluten free baking powder

1/4 tsp xanthan gum – I always use Doves Farm gluten free xanthan gum

225 g softened butter 

225 g caster sugar

4 eggs

Raspberry jam - I always use Bon Maman raspberry jam

Dusting of icing sugar


For butter cream icing:

500 g icing sugar

250 g  unsalted butter 

1 tsp vanilla extract

Food colouring (optional)

Sprinkles (make sure that they are gluten free!)
